Our distant Feis Ile 2025, right now at Kilchoman
We intently adopted Kilchoman at the start — we had been there for the distillery’s inauguration and so forth — however since then, I’m afraid we’ve fairly misplaced monitor. Are they doing effectively? Anyway, it is turn into one other nice Islayer…

Kilchoman 11 yo 2012/2024 ‘Legacy’ (54.5%, OB, LMDW Foundations, bourbon barrel, cask #623)
Color: straw. Nostril: exact, smoky and rooty. Celery, carrots, even turnips, with added honeysuckle and acacia honey. Frankly, it’s oddly mild at this stage. A contact of iodine tincture. With water: the water practically wipes the nostril clear, which is most stunning. Let’s say there are whispers of lemon and seaweed. Mouth (neat): gentle but very exact certainly, candy roots, cassava, mezcal, and rowan. With water: it gathers itself considerably, revealing a fairly medicinal peat that lastly decides to make an entrance. End: of medium size for a super-peated dram, fairly dry, but marked by a definite saline signature. Feedback: taking part in a little bit of cover and search, this candy, pretty child.

Kilchoman 10 yo 2013/2023 ‘100% Islay’ (55.5%, OB, Kensington Wine Market, ScotchGuy’s twentieth Anniversary, bourbon, 243 bottles)
Angus already tried this child. Color: white wine. Nostril: iodine tincture, sea water, coconut and vanilla. The cask speaks! With water: as soon as once more, the water simplifies issues, which is fairly stunning. Nonetheless, it stays pretty, clear, smoky and vanilla-laced. Inexperienced banana. Mouth (neat): sharp as a blade, although the cask makes itself identified fairly forcefully right here, with pineapple, grapefruit and mango. The factor is, we simply adore it – pure high-end wooden teknohlôgy. With water: splendid now, saline, lemony with out extra, with oysters in… oh effectively, let’s say mango vinegar. End: lengthy, simple and efficient. A cracking cask, that’s for positive. Feedback: a strikingly good match between a really lively distillate and an equally vigorous cask.

Three Kilchomans — that’s good.

Kilchoman 14 yo 2006/2021 (59.1%, OB, for Mikhail Selivanov, bourbon, cask #123, 209 bottles)
This one must be superb, as Mikhail is a well known and notably exacting connoisseur. Color: gold; Nostril: splendidly recent, all on pink grapefruit and smaller citrus fruits, with bursts of banana, guava and papaya which are typical of a advantageous cask, lending the entire affair a faint contact of early Seventies Bowmore. I swear. With water: boot polish and brass polish emerge. Mouth (neat): pretty creamy, a little bit extra herbaceous (dill, chervil), although nonetheless closely citrus-driven, the palate coming throughout as barely rougher than the nostril. Some inexperienced tannins and a touch of mint. With water: no actual change, aside from a inexperienced tea notice sneaking in. End: lengthy, saline, barely austere, however we do take pleasure in a dry end. Feedback: I discover these younger Kilchomans a bit difficult to scale back, maybe an AI-powered pipette (European, in fact) can be wanted. Alright then, time to place out a name for tenders…
