Griselda’s Tamale Recipe

Makes 36 tamales

Filling

Components:

  • 5 serrano chilis
  • 7 tomatillo chilis
  • 1 cup water
  • 1 clove garlic

  • 5 complete cloves

Directions:

  1. Set a medium sized pot on the range and add in serrano and tomatillo chilis with the water and produce to a boil for 10 minutes. Add the garlic, cloves and peppercorns and switch over to a blender. Mix till easy. 
  2. Set combination in a bowl and toss within the shredded rooster (recipe under)

Rooster Prep

Components:

  • 1 rooster breast
  • 1 garlic clove
  • 1 tablespoon salt

Directions:

  1. Deliver a medium pot of water to a boil. Add rooster breast, garlic and salt to the water, and cut back the warmth to let simmer for half-hour till the meat is mushy & tender. Take away from the water, put aside and let cool. Save 4 cups of the cooking water. Use your arms to shred the rooster and mix with the filling (recipe above).

Masa

Components:

  • 1 bag of corn husks (about 36 husks)
  • 1 (5 pound bag) masa
  • 2 cups crisco

Directions:

  1. In a big bowl, mix the masa, crisco and 4 cups of the cooking water from the rooster. Use a big spoon or rubber spatula to mix all substances collectively. Then use your arms to knead for 3 minutes.
  2. Rinse husks in water till clear. Pat dry with paper towels. Unfold ¼ cup of masa on the complete floor of the husk. Add 2 tablespoons of the rooster combination on high of the masa. Fold the masa on the perimeters of the husk over the rooster combination to seal it. Repeat with the rest of the husks. 
  3. Set 2 cups of water in a big double boiler pot, and set on the range over medium warmth. Pile all tamales contained in the pot, and cook dinner for two ½ hours. Take away the tamales from the pot and serve whereas sizzling.

Spicy Salsa & Toppings for Cinco de Mayo Entertaining

Components:

  • 4 roma tomatoes
  • 5 jalapeno peppers (Take away seeds from 4 of the 5 – an excessive amount of spice will conflict with the rosé. That stated, Griselda likes her tamales spicy and leaves ALL of the seeds in 🙂 
  • 1 garlic clove
  • 1 teaspoon salt 

Directions:
