Substitutions: 

Dialogue: This bread is a creation of my very own impressed by a number of the previous rye breads with scalds.  It consists of ~58% rye and the rest bread flour which makes for a lighter crumb than the previous few ryes I’ve baked. The added Brotgewürz spice combine is a pleasant taste enhancer to the bitter rye style of the crumb and the crust has a shocking crunch to it  together with a slight roasted taste. I’ve to say this can be a good bread to take pleasure in with nearly all types of sunshine cheeses and meats.
