Lychee Rosé Martini Cocktail Recipe



The Lychee Rosé is among the few cocktails featured on Spago Beverly Hills’ Uncommon & Extravagant menu. It is usually now Taylor Swift-approved

The mastermind behind the drink is bar director Adam George Fournier, previously a Diageo World Class U.S. Bartender of the 12 months. Employed firstly of 2023 because the restaurant’s first devoted bar director because the legendary Los Angeles restaurant opened in 1982, Fournier says that the Uncommon & Extravagant part on the revamped menu is a manner for Spago “to spotlight uncommon, distinctive, or luxurious spirits.”

The Lychee Rosé “was designed round Tequila Komos Reposado Rosa, a tequila aged in French oak ex-red wine barrels, [giving] it a novel taste profile [and color],” says Fournier. “Primarily it’s our reply to a Lychee Martini.”

The drink combines the rose-hued tequila with salted lychee cordial, manzanilla sherry, St-Germain elderflower liqueur, and recent lime juice for a stability of perfumed fruit, tart citrus, and a contact of saline.

At Spago, the cocktail is served in a glass formed like a rose and garnished with a number of delicate flower petals. At residence, a relaxing cocktail coupe will suffice. With or with out the flower petal garnish this drink is bound to make the entire place shimmer.



Prepare dinner Mode

  • 1 1/2 ounces reposado tequila, like Tequila Komos Reposado Rosa

  • 3/4 ounce salted lychee cordial (recipe beneath)

  • 1/2 ounces manzanilla sherry

  • 1/2 ounces elderflower liqueur, like St-Germain

  • 1/2 ounces lime juice, freshly squeezed

  • Garnish: edible flower petals (non-obligatory)

  1. Add the tequila, salted lychee cordial, manzanilla sherry, elderflower liqueur, and lime juice right into a shaker with ice, and shake till well-chilled.

  2. Pressure into a relaxing cocktail glass.

  3. Non-compulsory garnish of flower petals.

Salted Lychee Cordial

Mix 3 3/4 cups lychee purée (ideally Excellent Purée), 5 ounces Giffard Lychi-Li, 1 tablespoon Maldon sea salt, and 1/4 teaspoon citric acid in a high-speed blender. Mix on medium-high for five minutes (this helps with the feel). Bottle and retailer within the fridge for as much as three weeks.
